Seared Mahi Mahi with Fresh Herbs and Lemon



I love cooking fish because it is usually quick preparation, a great lean protein source, and, delicious.  It leaves you feeling satisfied and light.  It lends itself to cooking "clean" with all natural ingredients.  Seafood is honestly my favorite food category... well, maybe after fruit...

I decided on mahi mahi when I noticed the sale on fresh, wild caught mahi mahi at the store.  This dish came together nicely, and the great thing about anything deglazed with wine, is then the bottle is already opened to pair with dinner. :) 

I made this along with roasted brussel sprouts and it was the perfect way to wind down on a Sunday evening.

Yum! You can't go wrong with fish or b.sprouts. We had roasted sprouts on Sunday night too. I add some pineapple to them. It's actually good with that bit of sweet acid and the juice keeps them from drying out.

Thanks for the idea! I actually really enjoy a little crispiness in my brussel sprouts, so I'll have to experiment with this to see if I can meld the two. Thanks!

That looks great1 I like cooking fish, too for the same reasons. I LOVE brussels sprouts. The idea of adding pineapple is great!

Ok, I definitely need to try this. Not only are brussel sprouts in season right now, but we have mahi mahi in our freezer! Friday's menu for sure!
