I decided on mahi mahi when I noticed the sale on fresh, wild caught mahi mahi at the store. This dish came together nicely, and the great thing about anything deglazed with wine, is then the bottle is already opened to pair with dinner. :)
I made this along with roasted brussel sprouts and it was the perfect way to wind down on a Sunday evening.

Yum! You can't go wrong with fish or b.sprouts. We had roasted sprouts on Sunday night too. I add some pineapple to them. It's actually good with that bit of sweet acid and the juice keeps them from drying out.

i just started eating brussel sprouts, so those look amazing - must try oven roasting them!
Ok, I definitely need to try this. Not only are brussel sprouts in season right now, but we have mahi mahi in our freezer! Friday's menu for sure!
